Summer has gone, we are in lockdown, days are getting shorter, it’s cold and wet and we can’t go on holiday, or can we?
Let me whisk you away to a land of sugar cane spirit-soaked sunshine and dip your toes into an imaginary sea as we taste some amazing rum (or rum spirit drinks for you purists!).
First up we have Diablesse and their Caribbean blend. This super-moreish blend of Guinian, Bajan and Jamaican rums gives you so much to play with. Oak and spice on the nose then when it hits the tongue your palate will pick up vanilla, cinnamon and butterscotch. Perfect over ice or in a Treacle (see below).

60ml Diablesse Gold Rum
15ml Smokey Apple Caramel *
2 dashes Angostura Bitters
Add all ingredients to a mixing glass and thoroughly mix. Add ice and stir to desired taste before straining into an Old Fashioned Glass over fresh cubed ice. Spritz of Lemon Zest to garnish.
* For Smokey Apple Caramel: Add 3g of Lapsang Suchong Tea per 250ml of Cloudy Apple Juice and infuse for 3-5 minutes. Once tea has infused, strain to remove the leaves and add the juice to a pan with 100g caster sugar. Place on a medium low heat and allow sugars to caramelise and dissolve. Reduce the syrup by half and allow to cool before bottling.
Our next ray of sunshine comes to us from the mixology minds of Didsbury Gin. Arlu is Caribbean-born and Manchester-made. The Blood Orange is incredible with Christmassy citrus notes, a slight tannic edge on the palate and works so well in a wide variety of drinks, my favourite is a blood orange negroni

25ml Arlu Blood Orange Spiced Rum
12.5ml Rosso Vermouth
Add all the ingredients to a mixing glass and stir well. Add ice to a fresh glass, strain, add a slice of orange and put your feet up!
Finally and going out with a blast we have Banana Bomb. Hailing from Rockstar spirits this punchy number is an explosion of flavour. Caramelised Bananas and a warmth that rolls across your mouth from its 55% navy proofing. This is definitely a rum for those cold winter nights. But I promised sunshine and I aim to deliver.
Banana Bomb Daiquiri
40ml Banana Bomb
10ml Pisang Ambon/crème de banana
25ml Lime juice
Add all ingredients to a shaker, add ice, shake hard for 30 seconds. Strain into a chilled glass of your choice. But beware! These are very easy drinking.
